Default sum, count, average, min, max tools

At the bottom of my previous spreadsheets I had a handy tool for doing counts
and sums, etc. It is now gone. How do I get it back?

Right-click the right-hand side of the status bar, and you will see the
options. select the one that you want.

I assume you're referring to the status bar? Go to Tools-Options. Then in
the View tab, make sure "Status bar" is checked
