Default how do I enter more than one line in the same Excel Cell by us

Easily found in Help under Keyboard ShortcutsKeys for entering, editing,
formatting, and calculating data

Alt + Enter is second in the list.

You should spend a few minutes one day going through the list of keyboard
shortcuts. Can be quite handy.
