To start with, if "only one working on each shift at a
time" then there are only 168 hours available per week.
But you have specified 180 hours per week.

That said, try the following for starters

Headers, A1Date, B1Emplyee A, C1Employee B, D1Employee
C
A22/28/2005, B2"day", C2"night", D2"" <blank
A3 =A2+1
Copy A3 down
B3 =IF(B2="","day",IF(B2="day","night",""))
Copy B3 to C3 and D3
Copy B3:D3 down 3 rows (to Friday 3/4)
B7 =B6
Copy B7 to B7:D8
Copy B3:D3 to B9:13
Copy B7:B13 (a whole week) down as far as you want

This gives each employee at least one three day weekend
per month.

In A2 type in a monday date
